Rapadura sugar, also known as panela or piloncillo, is an unrefined whole cane sugar commonly used in some Latin American countries, as well as in parts of Asia and Africa. It is essentially pure, dried sugarcane juice that is extracted by crushing the sugarcane and then boiling the juice to concentrate it. The resulting product is then molded into solid blocks or cones, creating a dark brown, dense, and grainy sugar.
