Raw cacao powder is made by cold-pressing unroasted cacao beans to remove the fat (cacao butter), then grinding the remaining solids into a fine powder. It’s the closest you get to the natural chocolate bean in powdered form, with a deep, bitter chocolate flavour.
Flavour & aroma
Intensely chocolatey, bitter, slightly earthy and nutty. Less sweet than regular cocoa powder, with a richer, more complex profile. Often described as “dark chocolate in a powder.”
Common culinary uses
- Beverages – hot chocolate, smoothies, protein shakes
- Baking – brownies, cakes, cookies (often sweetened)
- Desserts – mousses, puddings, raw desserts, truffles
- Breakfasts – porridge, overnight oats, granola, smoothie bowls

Tip: Raw cacao is best combined with fats (like butter, coconut oil, or cream) to fully release its flavour.
Using raw cacao powder
- Sweeten lightly – raw cacao is naturally bitter; pair with honey, maple syrup, or stevia
- Combine with liquid – mix with warm liquid or milk alternative to bloom the flavour
- Roasting note – because it’s raw, it keeps more nutrients than roasted cocoa but has a slightly more astringent taste
