Rapadura sugar, also known as panela or piloncillo, is an unrefined whole cane sugar commonly used in some Latin American countries, as well as in parts of Asia and Africa. It is essentially pure, dried sugarcane juice that is extracted by crushing the sugarcane and then boiling the juice to concentrate it. The resulting product is then moulded into solid blocks or cones, creating a dark brown, dense, and grainy sugar.

It’s also known as panela, jaggery (in some regions), or piloncillo, depending on origin.

Flavour & texture

Deep, rich and complex with strong caramel, toffee and earthy molasses notes. Less sweet than white sugar by volume, with a slightly savoury, rounded depth. Texture ranges from coarse granules to solid blocks.

Common culinary uses

  • Baking – cakes, biscuits, spiced loaves
  • Hot drinks – coffee, hot chocolate, spiced milk
  • Traditional recipes – Latin American and Caribbean dishes
  • Sauces & marinades – especially with chilli or spice
  • Sweetening porridge or grains
  • Desserts – where a deep sugar flavour is desired

Rapadura is often grated or dissolved before use.

Using rapadura sugar 

  • Grate or crush if sold in blocks
  • Dissolve in warm liquid for even sweetness
  • Use less than white sugar — flavour is stronger
  • Pair with spices like cinnamon, clove, or ginger

Tip: Because it retains all the molasses, it behaves more like muscovado than Demerara.
