A vanilla pod (or bean) is the dried fruit of the vanilla orchid. Inside is a sticky, aromatic seed paste, which is where most of the flavour resides. The outer pod also contains flavour compounds and can be infused.
Flavour & aroma
Sweet, creamy, warm, and aromatic with subtle floral notes. The taste is rich but gentle, unlike powdered vanilla, which can sometimes taste sharper.

- Sauces & creams – crème anglaise, pastry cream, sabayon
- Infusions – sugar, milk, cream, or spirits

Using a vanilla pod well
Seeds vs pod: Use seeds for strong flavour and pod for gentle infusion.
Storage: Wrap in wax paper or keep in an airtight container; do not refrigerate.
Shelf life: 1–2 years if kept in a cool, dark place; the pod dries out if exposed to air.
