Demerara sugar is a raw cane sugar with large, golden-brown crystals. It is minimally refined, meaning some of the natural molasses from the sugar cane remains, giving it its characteristic colour and flavour.
Despite the name, modern Demerara sugar is not necessarily produced in Guyana, though the style originated there.
Flavour & texture
Warm, mild caramel and toffee notes. The crystals are coarse and crunchy, retaining texture even after baking or sprinkling.
Common culinary uses
- Hot drinks – coffee, tea, hot chocolate
- Baking – cakes, biscuits, flapjacks
- Toppings – sprinkled on crumbles, muffins, porridge
- Desserts – brûlée-style finishes
- Marinades & sauces – adds gentle sweetness
Demerara is often chosen where both flavour and texture matter.
Using Demerara sugar
- Sprinkle on top before baking for crunch
- Stir into hot liquids — dissolves more slowly than white sugar
- Combine with butter for caramel notes
- Use partially — replace some white sugar rather than all
Tip: For quicker dissolving, grind lightly or dissolve in warm liquid first.
