Chickpeas are a type of legume that has been cultivated for thousands of years and is a staple in many cuisines around the world. They are also commonly known as garbanzo beans. Chickpeas belong to the Fabaceae family and are one of the oldest cultivated crops in the Middle East.
Flavour & texture
Mild, nutty and earthy. When properly cooked, chickpeas are creamy inside with a soft but firm bite; undercooked, they remain chalky.
Common culinary uses
- Hummus – blended with tahini, lemon and garlic
- Curries & stews – chana masala, tagines
- Salads – warm or cold
- Roasting – for crunchy snacks
- Falafel – traditionally made from soaked, uncooked chickpeas
- Soups – adds body and protein
Dried chickpeas hold their shape better than canned.
Preparing dried chickpeas
- Soak 8–12 hours in plenty of cold water
- Drain and rinse
- Cook in fresh water until tender (60–90 minutes)
- Salt late in cooking to avoid toughness
Tip: Adding a pinch of bicarbonate of soda to the soak softens skins, but rinse thoroughly.
