Often called pepitas (from the Mexican Spanish pepita de calabaza), they are the edible seeds found inside pumpkins and other squash varieties. While the seeds from a carving pumpkin usually have a tough white outer husk, many culinary "pepitas" sold in stores come from specific oilseed pumpkins that grow without a shell, revealing a deep green kernel.
Pumpkin seeds are a nutrient-dense food, rich in various essential nutrients. They are an excellent source of healthy fats, protein, dietary fiber, vitamins (such as vitamin K, vitamin E, and some B vitamins), and minerals (including magnesium, zinc, iron, and copper).
Flavour & texture
They have a subtly sweet, nutty, and earthy flavour. When raw, they have a malleable, slightly chewy texture; once toasted, they become light and very crunchy.
Common culinary uses
- Snacking – Roasted with salt or spices like smoked paprika or cinnamon sugar.
- Garnish – Sprinkled over creamy soups (especially pumpkin or butternut squash), salads, and avocado toast.
- Baking – Added to granola, muffins, bread, and "brittles" for texture.
- Mexican Cuisine – A key ingredient in authentic moles and pipian sauces, where they are ground into a thick, nutty paste.
- Pesto – An excellent, more affordable alternative to pine nuts in traditional pesto recipes.
- Smoothies & Porridge – Blended or sprinkled on top for a protein and healthy fat boost.
Preparing pumpkin seeds
- Cleaning: If harvesting from a fresh pumpkin, rinse seeds in a colander under cold water to remove the stringy pulp.
- Drying: Spread seeds in a single layer on wax paper or a baking sheet; let them air-dry completely (overnight is best) before roasting to ensure maximum crunch.
- Roasting: Toss with a little oil and your choice of seasoning. Roast at 180°C (350°F) for 10–15 minutes, or until they are golden and begin to "pop."
- Seed Butter: Can be blended in a high-speed processor to create a creamy, nut-free "pumpkin seed butter."
